Protein+® Angel Hair with Italian Sausage Tomato Sauce

3 lbs Barilla Protein+® Angel Hair pasta
3 garlic cloves, minced
3 red peppers, small dice
6 oz. baby kale, or 1 bundle of kale, stems removed
1 cup Parmigiano-Reggiano cheese, grated
4 ½ oz. extra virgin olive oil
1 ½ yellow onion, small dice
4 ½ cups Italian sausage, bulk
3 cups tomato sauce
3 cups vegetable broth
Crushed red pepper to taste
Salt and black pepper to taste
  1. In a skillet over medium heat add olive oil, onion, and garlic. Cook until translucent, about 2 minutes. Add red pepper and cook an additional minute.
  2. Add sausage and brown thoroughly, about 5 minutes. Season, add tomato sauce and vegetable broth bringing to a simmer for 15 minutes. Stir in the kale until wilted. Add salt and pepper to taste.
  3. Cook pasta according to package directions, drain and then add to the sauce with the sausage and kale in the skillet. Top with cheese.
